Issue: Communities do not know what food pantries need in order to provide clients with healthy meal options. Root Cause: A lack of education results in communities having a restricted ability to support the pantry. Measurability: Elizabeth counted how many non-recipe specific items were donated and how many meal kits could be assembled from each donated item. Food pantries tracked how many of each recipe was taken. Sustainability: Many organizations have agreed to either continue using Pantry Meal Kits within their own outreach program, or attach Elizabeth’s program to their website.
